It's my birthday and I'll have cake if I want to!

This past week, I celebrated my birthday.  I won't go tell you how old I am but I will tell you about the amazing cakes we had.  Last year, there was a major cake catastrophe.  Nobody brought a cake!  I showed up to my birthday party with no cake... what's a birthday without cake?!  This year, everyone came prepared.  We had a small gathering of family and friends complete with 4 different cakes.  I think everyone who came brought one!  I also came prepared and made my own cake.

This got me to thinking about some fun and new cakes we can offer.  We have always offered our Protein Birthday Cake which is a white cake with white frosting and sprinkles and new a few months back added our Keto Cake.  This week, we updated 2 new flavours of cakes to include Carrot Cake with Cream Cheese frosting and my personal favourite, Red Velvet with Cream Cheese Frosting

 All our cakes are made without the use of white flour or white sugar.  We use either gluten free oats, coconut flour or almond flour.  Our sweetness is derived from Truvia which is a blend of stevia & erythritol.  This makes our cakes perfect for those who are diabetic, celiac, following a low carbohydrate or low sugar diet and basically anyone who wants to make their health a priority!  You could of course, order any of our cakes for special occasions such as birthdays, graduations, ect.  However, these cakes are so healthy that you could order one up just for fun.  Have a slice for breakfast, for a snack, for a late night treat, girls night.... whenever!  Everything is under 25 grams of carbohydrates and less than 150 calories per slice!

Chocolate Avocado Protein Brownies

Well it's officially the first week of June which means that summer is fast approaching and the long days of sunshine are here.  There is nothing better than sitting outside until 10 PM and still having that small bit of sunshine.  Insert a Buff Bakery treat to make that scene even better :)

Warm weather also calls for fresh tastes and seasonal fruits.  To stay in season, we launched our Raspberry & Blueberry Cheesecake Keto Cups this week.  These little guys will not disappoint!  Only 1 gram of net carbs per serving, they make the perfect little craving crusher. 

We're also highlighting some of our Fudgey Chocolate Protein Baking Mix recipes.  You'll find the mix throughout the city at Vitality Natural Food Market, Kelly's Nutrition and of course, online!This week it's the Chocolate Avocado Protein Brownie.  Super rich and moist.  This one can also be made with a lower carb count by using Lily's dark chocolate.  So if you're following a ketogenic or wanting to really keep sugars and carbs down, just make that small substitution!  Enjoy :)

Chocolate Avocado Protein Brownies

200 g Fudgey Chocolate Buff Bakery Protein Mix

2 Eggs

1 Large Avocado

6 tbsp Dark Chocolate Chips

Pre-heat oven to 350 degrees.  Mix together Protein Mix and Eggs.  Mash avocado and add to mix.  Transfer your mixture into a well greased 9x9 inch baking pan and sprinkle chocolate chips on top.  Bake for approx. 10-15 minutes or until a toothpick comes out clean.  Once cooled, cut into 9 squares.  If you want to decrease the carbohydrate count in this recipe, use Lily's dark chocolate!

Nutritional Information (per serving)

8 grams of fat

20 grams of carbohydrates (2 grams of fibre, 5 grams of sugar)

8 grams of protein

Strawberry Cheesecake Keto Cups

This week, we launched our final item to our Keto Family.  We launched three great new items this month which are part of the Keto group.  If you aren't sure what Keto means, we're talking about a specific dietary protocol.  One that is higher in fat, moderate in protein and very low in carbohydrates.  A Ketogenic diet forces the body to rely on fat for fuel rather than carbohydrates.

Keto Bread & Wednesday Markets

This week, we launched the second of our three new Keto items.  We're pretty excited for this one as it's going to be one of the most versatile products we offer.  There's so many fun ways you can use this product and today we're going to share a few great ones!  

We've got two amazing options for this bread depending on your preferences.  The Coconut Flour Bread is a great one to add a delicious topping to (see our recipe below for a cinnamon spread!) and also an easy snack or breakfast option topped with some good fats like a nut butter or some simple grass fed butter.

The Almond Flour Bread can also be used as a snack bread with a fat topping but a great idea we got from one of our clients is to use it for French Toast.  Who doesn't love French Toast in the morning?!  We do!  Especially with the long weekend coming up, why not treat yourself to a special breakfast and enjoy some delicious, low carb French Toast :) We've got a little recipe below for this one too!

Another exciting upcoming event for us is the Wednesday Market which starts next Wednesday, May 23rd from 3:30-6:30 PM.  Now you'll have another day to access even more of the great vendors at the Thunder Bay Country Market.  We're excited to have another day to reach the community too so stop by this week and check out what's at the booth.

On days were the Market is closed, you can still find some delicious treats available for walk ins at Synergee Fitness & Iron Performance.  So no matter what side of town you're on, we've got a drop in stop for you.  Of course, the full menu is online and we'll have your order ready for pick up within 48 hours at Synergee Fitness or we'll bring it to the Market for you if you're coming on Saturday or Wednesday.

Keto Cinnamon Bread

1 Slices Keto Coconut Bread

1 tbsp Butter

1/2 tsp Cinnamon

 

Melt butter in oven and stir in cinnamon.  Spread onto bread and ENJOY!

Keto French Toast

2 Slices of Keto Almond Bread

2 Eggs

1/4 cup Heavy Cream

 

Heat up pan on stove top.  Whisk together eggs and cream.  Add butter to your pan.  Dip your bread on both sides into egg mixture.  Cook in pan until golden brown on both sides.
